Simply Baked Paper Baking Cups are amazing. You cannot even imagine how
they transform a simple muffin into magic.
Buy Them.
This recipe has been slightly modified from the original found on the Pioneer Woman website:
In a large bowl combine:
3C flour
1 tsp baking soda
2 tsp baking powder
pinch or two of salt
dash or two of nutmeg
sift together OR pour together and mix around. haven't noticed any difference when using both methods
In another large bowl whisk together:
1C sugar
1/2 C vegetable oil
1 egg
1 generous cup of yogurt - i prefer honey flavored greek yogurt and I use slightly more than one cup
1 tsp +/- vanilla extract
once mixed, add the dry ingredients and stir by hand just until mixed. don't over stir. add 2 cups blueberries (i typically always use frozen that we've frozen over the summer or if not, frozen from a bag from our grocers freezer).
place simply baked paper baking cups on baking sheet. fill with the luscious muffin batter (it's kinda thick and sticky, drop from large tablespoon with the help of fingers or spatula) into the baking cups almost to the top.
final step before the oven: sprinkle raw sugar (turbinado sugar) on the tops to give a little extra crunch and sweetness - optional, yet recommended. :-)
place baking sheet with muffins in pre-heated oven set to 375
bake 25 minutes until tops are golden brown
